Method of Vinification: This red wine made from the partially dried grapes of Alicante bouschet and Sirah produced in the vineyards we have in Chianti area. The drying of the grapes, appassimento in Italian, is a very ancient wine making technique, still used today. All the bunches, harvested in October, selected for the production of the Fiore all’Occhiello have to dry for three, four months. In order to avoid mold and rotting during the drying process, bunches have to be perfectly healty, without any bruise and berries loosely packed to allow internal air circulation. All these elements must be taken into consideration when selecting grapes during harvest which is strictly done by hand because not all grapes are suitable for drying. Grapes are stored in specifically build houses called graticci, where they rest until January or February. The Appassimento takes 3-4 months more or less but even more, according to the percentage of water contained in the original grapes. It is in fact the water has to “evaporate” from the grapes, leaving almost intact sugars.
The most obvious visible consequence of this phase, as well as the withering of the berries, is the loss of weight of the bunch, which varies from 30% to 35%. The slow appassimento process preserves the organoleptic characteristics of the grapes.
At the end of drying process the grapes are crushed and the maceration of the skins is long.
Also fermentation at low temperature is very slow. The Appassimento leads to a higher concentration of the juice inside the berries, which then gives to the wine more body and structure to our I.G.T. Refinement period is about 3 months in the bottle.

Tasting notes: Ripe red fruits, cherry and raspberry jam and spicy notes. Soft and round, with a pleasant fresh finish. With the appassimento all the flavors are preserved and you will be able to enjoy them in your glass.
